It also relates to the use of such a composition for the protection of microorganisms during drying, storage and/or reconstitution, to a culture powder, to a process of making the culture powder and to products comprising the culture powder. La presente invención se refiere a una composición que comprende al menos un portador que comprende un polisacárido, al menos un antioxidante y al menos un aminoácido seleccionado de cisteína, lisina, alanina y arginina. Se refiere, además, al uso de una composición de este tipo para la protección de microorganismos durante el secado, el almacenamiento y/o la reconstitución, a un polvo de cultivo, a un proceso para elaborar el polvo de cultivo y a productos que comprenden el polvo de cultivo.
