Zusammenfassung:	The present disclosure is related to a process for obtaining flours from fruits and Opuntia spp cladodes for the production of flour-based food products that can be found on snacks and fried snacks which in turn, can be fried or baked; tortillas, baked goods in general, including cakes, pastries, cereals, sauces and dressings; food additives among many others and which also may comply with the General Health Law in its articles 65 and 66, Called the Law for the Promotion of Healthy Food for Girls, Boys and Teenagers. Esta invención hace referencia a un proceso para la obtención de harinas procedentes de frutos y cladodios de Opuntia ssp., para la producción de productos alimenticios a base de harina se pueden encontrar las botanas o frituras, que pueden ser fritas u horneadas, las tortillas, productos de panificación en general que incluyen pasteles, bollería, cereales, salsas y aderezos, aditivos alimentarios, entre muchos otros, que pueden cumplir con la Ley General de Salud en sus artículos 65 y 66, denominada "Ley de Promoción de la Alimentación Saludable para Niños, Niñas y Adolescentes".
