En la presente descripción se describen composiciones de manteca que comprenden de aproximadamente 40 % a aproximadamente 90 % de poliéster de sacarosa, en peso, en donde las composiciones de manteca pueden comprender, en base al peso total de la composición de manteca, un índice de grasa sólida de aproximadamente 5 % a aproximadamente 10% de sólidos a 40 °C y una firmeza de aproximadamente 90,000 Pa a aproximadamente 1,500,000 Pa.
