Zusammenfassung:	A continuous method and an apparatus for desalting pickles is provided. The method comprises conveying pickles having a certain salt content along a path; spraying water onto the pickles as they are conveyed along the path, wherein the water is provided in an amount sufficient to saturate the pickles and displace a portion of the salt therein; collecting water that drains from the saturated pickles; and measuring salt content of the collected water to monitor the process and determine when the desalting process is complete. Un método continuo y aparato para desalinizar encurtidos son proporcionados. El método comprende transportar encurtidos que tiene un cierto contenido de sal a lo largo de la trayectoria; rociar agua en los encurtidos mientras están transportados a lo largo de la trayectoria, en donde el agua es proporcionada en una cantidad suficiente para saturar los encurtidos y reemplazar una porción de sal de la misma; recolectar el agua que se drena de los encurtidos saturados; y medir el contenido de sal del agua recolectada para monitorear el proceso y determinar cuando el proceso de desalinización es completo.
