Zusammenfassung: | The invention refers to the food industry, namely to a process for obtaining a modified proteinic food isolate that can be used as proteinic additive in the production of food products. The process for obtaining a modified proteinic food isolate from sunflower groats includes washing of the groats, which is carried out 3 times with addition of 70...100 mg/l of EDTA, protein extraction in acid medium, sedimentation thereof in the isoelectric point and washing with water. The extracted protein is diluted with water up to a paste consistency with subsequent bringing of the paste pH up to 7,5...8,5 by adding NaOH 0,5 N at a continuous agitation, then it is modified with trypsin in the ratio trypsin: protein of 1:(3000...3500), during 20...30 min, at the room temperature, afterwards it is added the trypsin inhibitor in the ratio trypsin: inhibitor of 1:(3...5). The obtained modified proteinic isolate is dried. The result of the invention consists in the possibility of obtaining the proteinic isolate and modification thereof in a single technological process that allows a considerable increase in the yield of the modified protein.
