Zusammenfassung: | The invention relates to the wine industry, namely to a process for producing an anthocyanin concentrate from grapes.The process, according to the invention, provides for the mixing of the clarified grape juice and the grape anthocyanin extract, after which the resulting mixture is concentrated in vacuum at a temperature of at most 40°C to a sugar content of at least 80%, at the same time as anthocyanin extract is used grape wine or extract of husks of grapes of red varieties.
Invenţia se referă la industria vinicolă, şi anume la un procedeu de obţinere a unui concentrat antocianic din struguri.Procedeul, conform invenţiei, prevede amestecarea sucului de struguri limpezit şi a extractului antocianic de struguri, după care amestecul obţinut se concentrează în vid la o temperatură de cel mult 40°C până la concentraţia zaharurilor de cel puţin 80%, totodată în calitate de extract antocianic se utilizează vin de struguri sau extract de tescovină de struguri roşii.
Изобретение относится к винодельческой промышленности, а именно к способу получения антоцианового концентрата из винограда.Способ, согласно изобретению, предусматривает смешивание осветленного виноградного сока с виноградным антоциановым экстрактом, после чего полученная смесь концентрируется в вакууме при температуре не более 40°С до содержания сахаров не менее 80%, при этом в качестве антоцианового экстракта используется виноградное вино или экстракт из виноградной выжимки красных сортов. |
