Process for oak extract production for acceleration of wine and alcoholic drinks maturation

The invention relates to the wine-making industry and production of strong alcoholic drinks. The process includes harvesting, milling and washing of the oak raw material, thermal treatment, extraction thereof at a high temperature in three stages with alcoholic solutions having alcohol concentrations gradually decreasing from 65...75% to 10...20% vol., separation of extracts after each stage of extraction with the subsequent mixture and maturation thereof. The novelty of the invention consists in the fact that the thermal treatment is carried out in 2...7 stages with moistening between them of the raw material to a humidity of 10..50% and the extract of the last extraction stage is used for preparation of alcoholic solutions, utilized in the first two stages of extraction of the next amount of raw material.
