Zusammenfassung: | PURPOSE:To obtain the titled emulsion resistant to acid and having excellent foamability, by using an aqueous phase containing a protein component subjected to enzymatic treatment with a protease and preliminarily emulsifying the aqueous phase and an oily phase in the presence of an emulsifier. CONSTITUTION:An aqueous phase containing a protein component such as defatted milk powder or lactoalbumin in dissolved or dispersed state is heated at a temperature adequate to develop an enzymatic activity of a protease. A protease is added to the solution or dispersion in the above state and maintained for a prescribed period to effect the enzymatic treatment of the protein component. The obtained aqueous phase is mixed with an oily phase composed of palm oil, etc., and the mixture is preliminarily emulsified preferably in the presence of an emulsifier consisting of a polyglycerol fatty acid ester or succinic acid monoglyceride and is subjected to homogenization and sterilization to obtain the objective emulsion. |
