Zusammenfassung:The present invention relates to a Saccharomyces cerevisiae mutant strain, Saccharomyces cerevisiae SKSC34709-180, having a high protein content which survives after ultraviolet treatment of Saccharomyces cerevisiae, a producing method thereof, and use thereof. The Saccharomyces cerevisiae mutant strain of the present invention has a very high protein content and concentration, and thus can be very easily used as a protein substitute material, especially as a meat substitute such as an alternative meat. Therefore, the Saccharomyces cerevisiae mutant strain is expected to be usefully used in the alternative meat industry which has recently been in the spotlight. 본 발명은 사카로마이세스 세레비지에(Saccharomyces cerevisiae)를 자외선 처리 후 생존한, 높은 단백질 함량을 갖는 사카로마이세스 세레비지에(Saccharomyces cerevisiae) 변이 균주(Saccharomyces cerevisiae SKSC34709-180), 이의 제조방법 및 용도에 관한 것으로, 본 발명의 사카로마이세스 세레비지에(Saccharomyces cerevisiae) 변이 균주는 단백질 함량 및 농도가 매우 높아, 단백질 대체 소재, 특히 대체육과 같은 고기 대용품 등의 식품에 매우 용이하게 사용될 수 있으므로, 최근 각광받고 있는 대체육 관련 산업에 유용하게 이용될 것으로 기대된다.
