Zusammenfassung:	The present invention relates to an expression system optimized for ovalbumin production and, more particularly, to: an ovalbumin expression cassette; an expression vector comprising the same; a transformant into which the expression vector has been introduced; an ovalbumin production method using the same; and a food composition containing the same. The ovalbumin expression system of the present invention can mass-produce ovalbumin in an environmentally friendly manner and, in particular, can increase the efficiency of separation and purification without cell disruption by secreting ovalbumin extracellularly. In addition, the ovalbumin produced in this way can be used to develop products as a plant-based alternative protein material. 본 발명은 오브알부민 생산에 최적화된 발현 시스템에 관한 것으로, 구체적으로, 오브알부민 발현 카세트, 이를 포함하는 발현 벡터, 발현 벡터가 도입된 형질전환체, 이를 이용한 오브알부민 제조 방법 및 이를 함유하는 식품 조성물에 관한 것이다. 본 발명의 오브알부민 발현 시스템은 친환경적으로 오브알부민을 대량 생산할 수 있으며, 특히 오브알부민을 세포 외로 분비 생산하여 세포 파쇄없이 분리 정제의 효율성을 증대시킬 수 있다. 또한, 이렇게 생산된 오브알부민은 식물성 대체 단백질 소재로써의 제품 개발에도 활용될 수 있다.
