Zusammenfassung:The present invention relates to a method for producing noodles and noodles produced thereby. The method comprises: a step (1) of drying a Polygonatum odoratum; a step (2) of boiling lotus leaves and drying the same; a step (3) of drying Aronia leaves; a step (4) of drying a mulberry tree branch and frying the same; a step (5) of adding water to a medicinal plant mixing the dried Polygonatum odoratum in the step (1), the dried lotus leaves in the step (2), the dried Aronia leaves in the step (3), and the fried mulberry tree branch in the step (4), extracting and filtering the same to manufacture a medicinal plant extract; and a step (6) of aging a paste made by mixing wheat flour, colored barley powder and the medicinal plant extract manufactured in the step (5) and making noodles. According to the present invention, the noodles produced thereby can satisfy nutritional requirements and preferences. 본 발명은 (1) 둥굴레를 건조하는 단계; (2) 연잎을 데친 후 건조하는 단계; (3) 아로니아 잎을 건조하는 단계; (4) 뽕나무 가지를 건조한 후 볶는 단계; (5) 상기 (1)단계의 건조한 둥굴레, 상기 (2)단계의 건조한 연잎, 상기 (3)단계의 건조한 아로니아 잎 및 상기 (4)단계의 볶은 뽕나무 가지를 혼합한 약용식물에 물을 첨가하여 추출한 후 여과하여 약용식물 추출액을 제조하는 단계; 및 (6) 밀 분말 및 유색보리 분말과 상기 (5)단계의 제조한 약용식물 추출액을 혼합하여 반죽한 반죽물을 숙성한 후 제면하는 단계를 포함하여 제조하는 것을 특징으로 하는 국수의 제조방법 및 상기 방법으로 제조된 국수에 관한 것이다.
