Zusammenfassung: | The present invention relates to an extraction method for increasing the 6-gingerol content of ginger using citric acid. Using the method for manufacturing a ginger extract using citric acid according to the present invention, an extract with increased content of useful ingredients can be manufactured, and the ginger extract with increased content of active ingredients manufactured through the method can be used in the production of functional ginger processed products such as antioxidant, anti-inflammatory, anti-cancer, antibacterial, and immune-enhancing properties.
본 발명은 구연산을 이용한 생강의 6-진저롤 함량을 증진시키는 추출 방법에 관한 것으로, 본 발명에 의한 구연산을 이용한 생강 추출물의 제조 방법을 이용하면 유용성분 함량이 증가된 추출물을 제조할 수 있으며, 상기 방법을 통해 제조된 유용성분 함량이 증가된 생강 추출물은 항산화, 항염증, 항암, 항균 및 면역증강 등의 기능성 생강 가공 제품의 생산에 활용될 수 있다. |
