In the present invention, a jam containing coffee flavor can be manufactured by containing coffee in jam, decaffeinated coffee can be used to prevent side effects caused by caffeine, and the jam with excellent coffee flavor by fermenting decaffeinated coffee can be manufactured. 본 발명은 유제품에 발효 디카페인 커피를 혼합하여 유화시킨 다음 감압농축하여, 카페인 함량을 낮추면서 풍미가 우수한 커피잼을 제조하는 방법 및 이 방법으로 제조되는 디카페인 커피잼에 관한 것이다. 본 발명은 잼에 커피를 함유시켜 커피의 풍미가 함유된 잼을 제조할 수 있고, 디카페인 커피를 사용하여 카페인에 의한 부작용을 방지할 수 있으며, 디카페인 커피를 발효시킴으로써 커피의 풍미가 우수한 잼을 제조할 수 있다.
