Zusammenfassung:The present invention relates to a method for manufacturing a peach jam and the peach jam manufactured by the same, and in the case of the method for manufacturing the peach jam according to the present invention, it is possible to provide the peach jam with improved color and flavor while suppressing browning. The present invention relates to the method for manufacturing the peach jam comprising the following steps: 1) washing peaches; 2) heat-treating the washed peaches; 3) separating the flesh from the heat-treated peaches; 4) first heating the separated peach flesh; 5) adding an additive to the peach flesh that has undergone the first heating step; and 6) secondly heating the peach flesh to which the additive is added. 본 발명은 복숭아 잼의 제조방법 및 이의 방법으로 제조된 복숭아 잼에 관한 것으로, 본원발명의 복숭아 잼의 제조방법에 의하는 경우, 갈변 현상이 억제되어 색감이 향상되면서 향미 또한 향상된 복숭아 잼을 제공할 수 있다.
