Zusammenfassung:The present invention relates to a nuruk fermented tea prepared by inoculating tea leaves with yeast, steaming and drying 9 times, and then fermenting the yeast, and a manufacturing method thereof. In more detail, the present invention relates to a method for manufacturing a nuruk fermented tea that includes the steps of: 1) withering the tea leaves and inoculating a first yeast; 2) steaming once, removing moisture, and inoculating a second yeast; 3) repeating the step 2) 8 times; and 4) after steaming 9 times, inoculating yeast, steaming, fermenting, and completely drying, and a nuruk fermented tea manufactured by the above manufacturing method. 본 발명은 찻잎에 누룩 접종 후 증제 및 건조를 9회 반복한 후 누룩 발효시켜 제조한 누룩 발효차 및 이의 제조방법에 관한 것으로서, 보다 상세하게는 1) 찻잎의 시들리기를 한 후 1차 누룩을 접종한 후, 2) 1번 찐 후 수분을 날린 후, 2차 누룩을 접종한 다음, 3) 2번 과정을 8회 반복한 후, 4) 9번째 증제 후 누룩 접종한 후 발효시킨 다음 완전 건조하여 누룩 발효차를 제조하는 방법, 및 상기 제조방법으로 제조된 누룩 발효차에 관한 것이다.
