Zusammenfassung: | The present invention relates to onion-barley sprout tofu and a manufacturing method thereof. According to the present invention, provided is the onion-barley sprout tofu with enhanced functional efficacy, by applying an enzyme extraction method in which active ingredients are extracted by adding cellulase decomposing cell walls of barley sprouts. The barley sprout contains a chlorophyll component, and chlorophyll is a substance helping in detoxification and treatment of inflammation and has excellent detoxifying effects. In addition, the barley sprout also contains policosanol of 12 times more than sugar cane to lower a cholesterol level. One component of the barley sprout is food which is good for neutral fat to lower incidence of vascular diseases such as hyperlipidemia and dyslipidemia, and is food which lowers a glycemic index, contains a lot of dietary fibers, and is rich in vitamins to reduce obesity, thereby helping weight loss. In addition, the tofu discharges heavy metals and lead components and helps in preventing metabolic syndrome symptoms caused by obesity and diabetes. The manufacturing method of onion-barley sprout tofu comprises a barley sprout preparation process, an enzyme extract preparation process, an onion juice preparation process, a soybean soaking process, an onion-soybean milk preparation process, a mixing process, a boiling process, a bittern addition process, and a tofu completion process.
