Zusammenfassung: | The present invention relates to a method for manufacturing bovine bone extract powder, which extracts and hydrolyzes calcium components contained in a large amount in bovine bones to increase absorption in the body. In the bovine bone extract powder manufactured according to the present invention, protein is hydrolyzed into low molecular weight collagen so as to inhibit calcium contained in bovine bones from being coupled to phosphorus to be insoluble, and thus the absorption rate of calcium in the body is increased. Since dextrin contained in the bovine bone extract powder promotes production of lactic acid by proliferating bifidobacteria in the intestines, calcium components converted to insoluble calcium carbonate is converted back to soluble calcium lactate to be absorbed by the body along with water from the large intestine. In addition, solids adhering to a wall of a dryer are prevented during spray-drying of a bovine bone filtrate, and thus yield of collagen and calcium can be increased. The method comprises a fat removing step, a bovine bone pulverization step, an extraction step, a cooling step, a first hydrolysis step, a second hydrolysis step, an enzyme deactivation step, a filtering step, and a spray-drying step.
본 발명은 소뼈에 다량 함유된 칼슘 성분을 추출 및 가수분해하여 체내 흡수율을 높이도록 하는 소뼈 추출분말의 제조방법에 관한 것이다. 본 발명의 방법으로 제조된 소뼈 추출분말은 단백질을 저분자의 콜라겐으로 가수분해하여 소뼈에 함유된 칼슘이 인과 결합하여 불용화되는 것을 억제함으로써 칼슘의 체내 흡수율을 향상시킬 수 있으며, 소뼈 추출분말에 함유된 덱스트린은 장 내의 비피더스균을 증식시켜 젖산의 생성을 촉진함으로써 불용성의 탄산칼슘으로 전환된 칼슘 성분을 용해성의 젖산칼슘으로 다시 전환시켜 대장에서 물과 함께 인체에 흡수될 수 있도록 하고 소뼈 여과액의 분무건조시 고형분이 건조기 벽면에 고착되는 것을 억제하여 콜라겐과 칼슘의 수율을 높일 수 있다. |
