Zusammenfassung:The present invention relates to a composition for promoting peristaltic movement or bowel movement containing brewing fermentation products as active ingredient and an enzyme food and beverage manufacturing method using the same and, more specifically, to high value-added enzyme food and beverages for promoting an intestinal function and bowel movement using a unique brewing fermentation product-derived enzyme development technology. According to the present invention, the method comprises: a first step of preparing a brewing fermentation product; a second step of freeze-drying the brewing fermentation product; a third step of preparing a mixed solution by mixing the freeze-dried brewing fermentation product and purified water; a fourth step of filtering the mixture to prepare a filtrate of a liquid form; and a fifth step of bottling the filtrate. 본 발명은 양조 발효물을 유효성분으로 포함하는 장 연동운동 촉진 또는 배변활동 개선 조성물 및 이를 이용한 효소식음료 제조방법에 관한 것으로, 보다 상세하게는 고유 양조 발효물 유래 효소 개발 기술을 활용한 고부가가치 장 기능 및 배변 활동 개선 효소식음료에 관한 것이다. 본 발명의 양조 발효물을 이용한 효소식음료 제조방법은, 양조 발효물을 제조하는 제 1단계; 상기 양조 발효물을 동결건조하는 제 2단계; 상기 동결건조한 양조 발효물과 정제수를 혼합하여 혼합액을 제조하는 제 3단계; 상기 혼합액을 여과하여 액상의 형태로 여과액을 제조하는 제 4단계; 상기 여과액을 병입하는 제 5단계;를 포함하는 것을 특징으로 한다.
