Zusammenfassung:The present invention relates to a method for manufacturing ox head soup containing soft tofu which can be enjoyed by anyone, regardless of age or gender, by removing the peculiar smell of ox head soup and adding soft tofu. The present invention, also relates to ox head soup containing soft tofu with removed peculiar smell and improved palatability. The method for manufacturing ox head soup containing soft tofu comprises the following steps: (S1) cutting and trimming the ox head; (S2) putting the trimmed ox head in a first pot and boiling the same for 1 to 3 hours, then separating the meat and ox head bones and boiling the same further; (S3) preparing a second pot, putting the ox head bones separated in the step (S2) and boiling the same; (S4) when the second pot starts to boil, transferring the boiled broth to a separate container and holding the same for 5 to 20 minutes, then transferring the broth to the first pot; (S5) continuously mixing the broth while controlling the concentration so that the broth of the first pot turns light yellow; and (S6) adding and mixing the soft tofu. 본 발명은 소머리국밥 특유의 잡내를 없애고 순두부를 넣어 남녀노소 누구나 부담 없이 즐길 수 있는 소머리 순두부 국밥의 제조방법에 관한 것이다. 본 발명은 또한, 잡내가 제거되고 기호성이 향상된 소머리 순두부 국밥에 관한 것이다.
