The extract of Astragalus propinquus leaves fermented with lactobacillus has increased contents of total polyphenol, flavonoid, isoflavonoid, and metabolome substances and an aromatic substance, an excellent antioxidant effect, and increased flavor, thereby being usefully used as an antioxidant functional composition.
