Zusammenfassung: | The present invention relates to a diet meal for weight loss including powder of Dodam rice in which a content of resistant starch is increased and a particle size is reduced so as to have an improved texture, and to a method of preparing a diet meal for weight loss, including a step of steaming Dodam rice before milling and drying and thermally treating the Dodam rice after milling. The diet meal with an improved texture, prepared by the method provided in the present invention contains rice powder having a reduced particle size compared to a diet meal prepared by a conventional method, and thus has an improved texture. In addition, a content of resistant starch contained in the diet meal is increased so that a weight loss effect of the diet meal can also be increased. Therefore, the diet meal according to the present invention can be widely utilized in the development of various products for weight loss.
본 발명은 저항전분의 함량이 증가하고 입자크기가 감소되어 식감이 향상된 도담쌀의 분말을 포함하는 다이어트용 선식 및 상기 도담쌀을 도정이전에 증숙하고, 도정이후에 건조열처리하는 단계를 포함하는 다이어트용 선식의 제조방법에 관한 것이다. 본 발명에서 제공하는 방법으로 제조된 식감이 향상된 다이어트용 선식은 종래의 방법으로 제조된 다이어트용 선식에 비하여, 입자크기가 감소된 쌀분말을 포함하여 식감이 개시될 뿐만 아니라, 선식에 포함된 저항전분의 함량이 증가되어 다이어트 효과 역시 증가되므로, 다양한 다이어트용 제품의 개발에 널라 활용될 수 있을 것이다. |
