In addition, the present invention relates to a use of a yeast variety, Saccharomyces cerevisiae var. bayanus for the removal of monosaccharides from plant extracts. 본 발명은 폴리페놀이 농축되거나 및/또는 실질적으로 단당이 없는 식물 추출물의 제조방법 및 이에 따라 수득된 식물 추출물에 관한 것이다. 또한, 본 발명은 식물 추출물에서 단당의 제거를 위한 변종 사카로마이세스 세레비지에 변종 바야누스 효모의 용도에 관한 것이다.
