Zusammenfassung: | The present invention relates to a method for manufacturing a bean curd using edible insects and the bean curd using edible insects manufactured by the method, wherein the method comprises following steps of: (1) immersing beans in water, mixing soaked beans with water, and crushing the same; (2) boiling the crushed beans from the step (1), placing the same in a filtering net, squeezing the same to separate bean-curd dregs, followed by preparing a bean curd liquid; (3) adding salty water, an edible insect powder or edible insect juice to the bean curd liquid prepared in the step (2), followed by boiling and solidifying the same; and (4) compressing a solidified bean curd in the step (3), followed by molding and dehydrating the same. The present invention can manufacture the bean curd with improved palatability.
본 발명은 (1) 콩을 물에 침지한 후 꺼낸 불린 콩에 물을 혼합한 후 분쇄하는 단계; (2) 상기 (1)단계의 분쇄한 콩을 끓인 후 여과망에 넣고 압착하여 비지를 분리한 후 두부물을 준비하는 단계; (3) 상기 (2)단계의 준비한 두부물에 간수와 식용곤충 분말 또는 식용곤충 착즙액을 첨가한 후 끓여 응고시키는 단계; 및 (4) 상기 (3)단계의 응고시킨 두부를 압착하여 성형 및 탈수시키는 단계를 포함하여 제조하는 것을 특징으로 하는 식용곤충을 이용한 두부의 제조방법 및 상기 방법으로 제조된 식용곤충을 이용한 두부에 관한 것이다. |
