Zusammenfassung: | The present invention relates to a method for manufacturing a health functional food using fermented plums and the health functional food by the manufacturing method. A purpose is to provide novel form plum processed goods which do not damage a pharmacological effect of plums, have excellent texture and taste, and are easy to take. For the same, the method for manufacturing the health functional food using fermented plums according to an embodiment of the present invention comprises: a process of manufacturing fermented plums by mixing green plums and sugar in a weight ratio of 1:1, and then fermenting the same at room temperature for 4 to 6 months; a process of drying the fermented plums; and a process of and baking the dried plums for 25 to 35 minutes at a temperature of 120 to 130°C.
본 발명은 발효 매실을 이용한 건강기능식품의 제조방법 및 그 제조 방법에 의한 건강기능식품에 관한 것으로서, 매실의 약리 효과를 손상시키지 않으면서도, 조직감 및 맛이 우수하고 섭취가 용이한 새로운 형태의 매실 가공품을 제공하는 데 그 목적이 있다. 이를 위해 본 발명의 일 양상에 따른 발효 매실을 이용한 건강기능식품의 제조방법은, 청매실에 설탕을 1:1의 중량비로 혼합하여 4~6개월 동안 실온에서 발효시켜 발효 매실을 제조하는 과정; 상기 발효 매실을 건조시키는 과정; 상기 건매실을 120~130℃의 온도에서 25~35분간 굽는 과정;을 포함하는 것을 특징으로 한다. |
