Zusammenfassung: | The present invention relates to a Lactobacillus plantarum MBE/L2990 strain having an excellent α-rhamnosidase enzyme activities and a bioconversion activity of ginsenoside Re and Rb1 into ginsenoside Rg1 and Rg5, and a usage thereof. According to the present invention, the Lactobacillus plantarum MBE/L2990 strain is safe in terms of the sitology and excellent in bio-converting ginsenoside Re and Rb1 contained in ginseng into ginsenoside Rg1 and Rg5. Accordingly, the Lactobacillus plantarum MBE/L2990 (KCTC18529P) strain according to the present invention is used to manufacture fermented ginseng or red ginseng having the content of Rg1 and Rg5 increased relatively, thereby being very useful in relevant industries.
