A food information management apparatus according to an embodiment of the present invention can provide a spectroscopy signal database for each concentration of calorific nutrients constructed on the basis of spectroscopy signals of standard model foods which are optionally prepared for each concentration of calorific nutrients. The apparatus comprises: a standard model food spectroscopy information acquiring unit acquiring a standard spectroscopy signal corresponding to each standard model food and calorific nutrient information for each standard model food; a reference food spectroscopy information acquiring unit acquiring a spectroscopy signal corresponding to each reference food and calorific nutrient information for each reference food; a learning unit learning a method for generating the spectroscopy signal from synthesized calorific nutrient information; and a database storing the spectroscopy signal on a newly combined calorific nutrient based on a learning result of the learning unit. 본 발명의 일 실시 예에 따른 식품 정보 관리 장치는 열량 영양소의 농도 별로 임의로 제조된 표준 모델 식품의 분광신호를 기초로 구축된 열량 영양소 농도 별 분광신호 데이터베이스를 제공할 수 있다.
