Zusammenfassung:The present invention relates to a fish cake with aronia having improved functionality which has fish meat dough composed of 80-90% of white meat paste, 0.5% of a synthetic seasoning or smaller, 2-3% of domestic solar salt, 2-3% of aronia, 4-5% of flour, and 4-5% of starch. According to the present invention, a method for producing a fish cake with aronia is generally completed through three steps which are (a) a step of extracting juice from an aronia fruit to separate the aronia fruit into pulp and juice, pulverizing the pulp, and freezing the juice in a certain form, (b) a step of adding aronia to fish cake dough to mold fish cake to cool after steaming or frying, and (c) a step of aging half-finished fish cake at low temperatures. 본 발명은 백색육 고기풀 80~90%, 합성조미료 0.5%이하, 국산천일염 2~3%, 아로니아 2~3%, 밀가루 4~5%, 전분 4~5%를 포함한 어육반죽을 특징으로 하는 기능성이 향상된 아로니아 어묵이다. 본 발명은 아로니아가 함유된 어묵제조 방법은 크게 세단계를 거쳐 완성된다.a)아로니아 열매를 착즙하여 과육과 과즙으로 분리하는 단계와, 과육을 분쇄하고 과즙은 일정한 형태로 얼리는 단계이다. b)어묵반죽에 아로니아를 첨가하여 성형하여 찌거나 튀겨 냉각하는 단계이다. c) 반제품 어묵을 저온 숙성하는 단계이다.
