Zusammenfassung:The present invention provides a rice beverage assisting activity of alcoholysis enzyme and acetaldehyde decomposing enzyme, and a manufacturing method thereof. The manufacturing method of a rice beverage comprises the following steps of: cooking rice by using rice; mixing malt with water, immersing, and manufacturing a malt extract; adding minor ingredients for activating the alcoholysis enzyme; adding the malt extract to the rice, saccharifying, and manufacturing a saccharified solution; and adding sugar to the saccharified solution, and boiling. The minor ingredients include bean sprouts, shiitake mushrooms, white cucumber and radish. 본 기재는, 쌀을 이용하여 밥을 짓는 단계, 엿기름과 물을 혼합한 뒤 수침하여 엿기름 추출액을 제조하는 단계, 알코올 분해 효소를 활성화시키는 부재료를 첨가하는 단계, 밥에 엿기름 추출액을 첨가하고 당화시켜 당화액을 제조하는 단계 및 당화액에 설탕을 넣고 끓이는 단계를 포함하며, 부재료는, 콩나물, 표고 버섯, 백다다기 오이 및 무를 포함하는 쌀 음료의 제조 방법 및 이에 의해 제조된 쌀 음료에 관한 것이다.
