Zusammenfassung:A premix for rice noodles contains a rice powder mixture containing wet rice powder and puffed rice powder, starch, egg white, and salt. The rice powder mixture contains 20-80 wt% of wet rice powder and 20-80 wt% of puffed rice powder. By using domestic rice without mixing flour or gluten, it is possible to produce glutinous rice noodles, thereby promoting consumption of domestic rice. 쌀면용 프리믹스는 습식 미분 및 팽화미분을 포함하는 쌀가루 혼합물, 전분, 난백, 및 소금을 포함하고, 상기 쌀가루 혼합물은 상기 습식 미분을 20 중량% 내지 80 중량% 만큼 포함하고, 상기 팽화미분을 80 중량% 내지 20 중량% 만큼 포함한다. 밀가루나 글루텐을 혼합하지 않고 우리 쌀을 이용하여 찰진 쌀면을 제조할 수 있고, 이에 따라 우리 쌀의 소비를 촉진할 수 있다.
