Zusammenfassung: | The present invention relates to a method for producing rice noodle for weight control using Dodam rice with high content of amylose containing resistant starch. More specifically, the Dodam rice ensures high content of amylose and resistant starch compared to common rice varieties, and has different characteristics of starch from common rice, thereby showing low level of absorption to the body. When rice noodle was prepared using mixed rice composed of Dodam rice alone or Dodam rice with common rice, the digestibility is increased in spite of an increase in the content of the resistant starch as a mixing ratio of Dodam rice increases, thereby being useful as a raw material of rice noodle for weight control.
본 발명은 저항전분을 함유하는 고아밀로스의 도담쌀을 이용한 다이어트용 쌀국수의 제조 방법에 관한 것이다. 보다 상세하게는, 본 발명의 도담쌀은 일반 쌀 품종에 비해서 높은 아밀로스 및 저항전분 함량을 가지고, 전분 특성이 일반 쌀과 차이를 가져 체내 흡수되는 정도가 낮을 것으로 예상하였고, 도담쌀 단독미 또는 도담쌀을 일반쌀과 혼합한 혼합미를 사용하여 쌀국수를 제조하였을 때, 도담쌀의 혼합 비율이 증가함에 따라 저항전분의 함량이 증가함에도 불구하고 소화율 역시 증가하므로, 본 발명의 도담쌀을 다이어트용 쌀국수의 원재료로서 유용하게 사용할 수 있다. |
