Zusammenfassung:The present invention relates to a hot sauce composition containing an extract of fermented pepper, and a production method thereof. According to one aspect of the present invention, the hot sauce composition containing the extract of lactobacillus-fermented pepper does not have unpleasant taste due to feeling of irritation without degrading external appearance when cooking, by not containing pepper particles. In addition, the composition of the present invention provides spicy taste as well as fresh aroma of kimchi owing to volatile aromatic components produced after fermentation, and thus can be applied in various types of foods. 본 발명은 고추 발효물의 추출물을 함유하는 매운소스용 조성물 및 이의 제조방법에 관한 것이다. 본 발명의 일 측면인 고추 유산균 발효물의 추출물을 포함하는 매운 소스용 조성물은, 고추 입자를 포함하지 않기 때문에, 요리 시 외관을 해치지 않고, 이물감으로 인한 텁텁함이 없다. 또한, 상기 조성물은 매운맛 뿐만 아니라, 발효 후 생성된 휘발성 향기성분들로 인하여 신선한 김치향을 제공할 수 있으며 다양한 요리에 적용 가능하다는 장점이 있다.
