Zusammenfassung:	The present invention relates to a method for manufacturing functional soybean paste containing Smilax china root extracts and, more specifically, to soybean paste having a heavy metal emission function and a method for manufacturing soy sauce. The soybean paste containing Smilax china root extracts is manufactured by the following steps of: washing, immersing and steaming soybean, grinding the steamed soybean, and mixing the soybean with Salicornia europaea and bay salt; preparing soybean lump and fermenting the soybean lump using rice straws; and mixing and fermenting salt water and Smilax china root extracts in the fermented soybean lump. 본 발명은 청미래덩굴 뿌리 추출물을 함유하는 기능성 장류의 제조 방법에 관한 것이다. 보다 구체적으로는, 본 발명은 대두를 세척, 수침 및 증자한 후, 증자된 대두를 파쇄하여 함초 및 천일염과 혼합하여 메주를 제조하여 볏짚을 이용하여 띄우고, 메주에 염수 및 청미래덩굴 뿌리 추출물 분말을 혼합하여 발효시키는 단계를 포함하는 청미래덩굴 뿌리 추출물을 함유하는, 중금속 배출 기능을 갖는 된장 및 간장의 제조 방법에 관한 것이다.
