Zusammenfassung: | The present invention relates to a method for manufacturing functional soybean paste containing Smilax china root extracts and, more specifically, to soybean paste having a heavy metal emission function and a method for manufacturing soy sauce. The soybean paste containing Smilax china root extracts is manufactured by the following steps of: washing, immersing and steaming soybean, grinding the steamed soybean, and mixing the soybean with Salicornia europaea and bay salt; preparing soybean lump and fermenting the soybean lump using rice straws; and mixing and fermenting salt water and Smilax china root extracts in the fermented soybean lump.
