Zusammenfassung:The present invention relates to a method for producing ginsenoside Rh2, Rk2, and Rh3 through enzyme and organic acid treatment, and specifically, to a method for producing ginsenoside Rh2, Rk2, and Rh3, which are minor ginsenosides (rare ginsenosides) from a ginseng crude saponin, by using a method of treating with an enzyme and an organic acid. According to the present invention, rare ginsenosides Rh2, Rk2 and Rh3 in a minor form are produced safely and efficiently, which are present in trace amounts in processed products of ginseng or ginseng. Particularly, the process of the present invention is advantageous, as processes are very simple and the production efficiency is very high, thereby capable of mass-producible for industrial uses. 본 발명은 효소 및 유기산 처리를 통한 진세노사이드 Rh2, Rk2 및 Rh3 제조방법에 관한 것으로, 구체적으로 효소 및 유기산 처리 방법을 사용하여 인삼 조사포닌으로부터 마이너 진세노사이드(희귀 진세노사이드)인 진세노사이드 Rh2, Rk2 및 Rh3를 제조하는 방법에 관한 것이다. 본 발명에 따르면 인삼 또는 인삼의 가공품에 극미량으로 존재하는 마이너 형태(minor form)의 희귀 진세노사이드인 Rh2, Rk2 및 Rh3를 안전하고 효율적으로 제조할 수 있다. 특히 본 발명의 방법은 공정이 매우 간단하며 제조 효율이 매우 뛰어나 산업적인 용도로의 대량생산이 가능하다는 장점이 있다.
