Zusammenfassung: | The present invention relates to a method for preparing seasoning containing a dietary fiber. The present invention includes: a) a step of ripening mixed source meat for 12 to 16 hours at 1 to 3 degrees Celsius, the mixed source meat being a mixture of 50 to 70 parts by weight of soy sauce, 25 to 40 parts by weight of sugar, and 100 parts by weight of source meat; b) a step of heating the ripened mixed source meat for 0.4 to 1 hour at 90 to 110 degrees Celsius; c) a step of grinding the heated mixed source meat to 150 to 180 meshes after drying it; d) a step of finishing the preparation by performing heating for 1 to 5 minutes at 65 to 85 degrees Celsius after mixing 5 to 10 parts by weight of the dietary fiber and 20 to 40 parts by weight of solid powder as a natural material with 100 parts by weight of the ground mixed source meat powder. The seasoning containing the dietary fiber that is prepared by the present invention is better in flavor, taste, and scent than existing liquid and powder seasoning, and thus can reduce the use of sugar or artificial sweeteners from an excessive level during cooking. In addition, the seasoning is prepared by mixing of the mixed source meat, the dietary fiber, and the natural material, and thus the seasoning can contribute to health, preference, and nutrition. According to the present invention, the nutritional ingredients of the natural material can be taken in as they are and the seasoning containing the dietary fiber can be provided with its solubility enhanced with respect to water.
a) 원료육 100중량부에 간장 50~70중량부, 설탕 25~40중량부를 혼합한 원료혼합육을 1~3℃에서 12~16시간 숙성하는 단계; b) 상기 숙성한 원료혼합육을 90~110℃,0.4~1시간 가열하는 단계 c) 상기 가열된 원료혼합육을 건조하고 150~180mesh로 분쇄하는 단계; d) 상기 분쇄된 원료혼합육 분말 100중량부에 식이섬유 5~10 중량부 및 천연 재료인 고형물 분말20~40중량부로 혼합하여 65~85℃로 1~5분간 가열하여 완성하는 단계;를 포함하는 것을 특징으로 하는 식이섬유를 함유한 조미료 제조방법을 제공한다. 본 발명에 의해 제조된 식이섬유를 함유한 조미료는 기존의 액상조미료, 분말조미료에 비해 풍미가 강화되고 맛과 향이 뛰어나, 음식 조리시 과도한 당분이나 인공감미료의 사용을 줄이는 효과가 있다. 또한 원료혼합육, 식이섬유, 천연재료를 혼합하여 조미료를 제조함으로써, 건강 지향적인 조미료를 제공할 수 있고 기호성과 영양성을 증진시킬 수 있다. 본 발명은 천연재료의 영양성분을 그대로 섭취 가능함과 동시에 물에 대한 용해성을 높인 식이섬유를 함유한 조미료를 제공할 수 있다. |
