Zusammenfassung: | The present invention relates to a production method of a canned pen shell adductor muscle, comprising: a first step of immersing a pen shell adductor muscle in a saline solution; a second step of steaming the pen shell adductor muscle immersed in the saline solution; a third step of mixing the saline solution in the steamed pen shell adductor muscle; a fourth step of putting the pen shell adductor muscle mixed with the saline solution in a can and sealing the same; and a fifth step of sterilizing the pen shell adductor muscle contained in the can. The canned pen shell adductor muscle can be quickly produced due to a simple production method, has excellent physical properties such as hardness and chewiness, and shows a similar color in comparison with the adductor muscle of living pen shell.
