Zusammenfassung:The present invention relates to a method for preparing cold brew coffee which can maintain flavor even when being stored for a long period of time and have enhanced storage stability by preventing spoilage. The method includes the steps of adding alkaline ionized water to undiluted cold brew coffee prepared by using deep sea water as an extraction solvent and sterilizing the mixture solution thereof. The present invention can prevent the occurrence of the mold by heat sterilization while ensuring the excellent storability of the cold brew coffee and maintaining the flavor thereof. 본 발명은 장기 보관하여도 풍미가 변하지 않고 부패가 어려워 보존성이 향상된 더치커피의 제조방법에 관한 것으로서, 해양심층수를 추출용매로 사용하여 만들어진 더치커피 원액에 알칼리이온수를 첨가하고 살균소독하여 이루어지는 더치커피의 제조방법이다. 본 발명에 따르면 가열살균소독을 함으로써 곰팡이가 발생하지 않으면서도 동시에 풍미가 변하지 않는 보존성이 우수한 더치커피를 제공할 수 있다.
