Zusammenfassung:	The present invention relates to a pharmaceutical composition for preventing and treating liver diseases, to a health functional food for protecting liver comprising an enzyme-treated bean sprout extract as an active ingredient, and to a method for extracting enzyme-treated bean sprouts. The enzyme-treated bean sprout extract of the present invention is capable of significantly extracting asparagine in comparison with a general bean sprout extract or a bean sprout juice, and having excellent activation of inhibiting liver damage by peroxide in a HepG2 cell at the same time, by enzyme-treating the bean sprout and extracting at room temperature at the same time. 본 발명은 효소 처리 콩나물 추출물을 유효성분으로 하는 간보호용 건강기능식품, 간질환 예방 및 치료용 약학 조성물 및 효소 처리 콩나물 추출방법에 관한 것으로, 본 발명의 효소 처리 콩나물 추출물은 콩나물을 효소 처리와 동시에 실온에서 추출함으로써 통상의 콩나물 추출물이나 콩나물즙에 비하여 아스파라긴이 현저히 많이 추출되고, 동시에 HepG2 세포에서 과산화수소에 의한 간손상 억제 활성이 뛰어나다.
