Zusammenfassung: | The present invention relates to a method for manufacturing cocoa extract powder containing high flavanol, and cocoa extract powder manufactured thereby. More specifically, the method comprises the following steps: preparing a liquid extract by mixing 5 to 40 wt% of cocoa powder with 60 to 95 wt% of fermented alcohol, and extracting and filtering the same; and obtaining and concentrating a fraction in which the amount of polyphenol and flavonol is increased by refining the extract using a resin, and filtering and spray-drying the same; and manufacturing cocoa extract powder having greater than or equal to 10 wt% of polyphenol and having greater than or equal to 3 wt% of a flavanol and procyanidin. When taking the cocoa extract powder having increased polyphenol, flavanol, and procyanidin manufactured by the present invention, a cardiac disorder can be prevented by preventing arteriosclerosis; senile dementia or a stroke and a vessel disease can be alleviated by helping blood flow of a major part of a brain; and high blood pressure can be lowered by controlling nitrogen oxide synthesis of an inner blood vessel. In addition, an inflammatory skin red spot induced by ultraviolet rays is reduced, thereby preventing skin aging, inflammation, wrinkle formation and the like. |
