Zusammenfassung: | Disclosed are a method for preparing polyphenol concentrate using coffee bean capable of maximizing the functional effect of the polyphenol contained in coffee beans by refining the coffee beans, concentrated polyphenol prepared thereby, and a functional product containing the same. To this end, the present invention provides a product containing 0.025 to 5 wt% of condensed polyphenol based on 100 wt% of the product, wherein the polyphenol is extracted from the coffee beans. According to the invention, expensive equipment is not required to produce the concentrated polyphenol and a polyphenol concentrate and production costs are saved in comparison with an existing method for producing concentration polyphenol and a polyphenol concentration since the method is progressed through a relatively simple process. Moreover, according to the present invention, the polyphenol is extracted and separated from the coffee beans and coffee containing the polyphenol has improved texture, flavor, and taste and has an antioxidative function, thereby contributing to health maintenance and disease prevention.
