Zusammenfassung:PURPOSE: A method using a fluorescence spectrum test for measuring an in-storage acidification degree of powdered soybeans is provided to measure the acidification degree of the powdered soybeans by analyzing the fluorescence of a powdered soybean sample. CONSTITUTION: A method using a fluorescence spectrum test for measuring an in-storage acidification degree of powdered soybeans includes the following steps of: manufacturing a reactant by putting the powdered soybean sample into a solution in which chloroform and methanol are mixed; filtering the reactant; obtaining the supernatant by centrifugally separating the filtered solution; and measuring the fluorescence of the supernatant.
