Zusammenfassung:PURPOSE: A manufacturing method of a beta-lactoglobulin/alginic acid nanoemulsion carrier containing coenzyme Q10 is provided to improve the collection efficiency of the coenzyme Q10 using an internal gelation technology. CONSTITUTION: A manufacturing method of a beta-lactoglobulin/alginic acid nanoemulsion containing a biologically active substance comprises the following steps: heat-processing beta-lactoglobulin at 56-74°C; mixing the partially degenerated beta-lactoglobulin with alginic acid to obtain a mixed solution; and adding the biologically active substance and calcium chloride as a crosslinking agent into the mixed solution, and internally gelating and collecting the biologically active substance. The biologically active substance is coenzyme Q10. The nanoemulsion contains 0.001-0.05% of alginic acid, 3.5-4.5mM of calcium chloride, and less than 5% of surfactant in the amount of the mixed solution.
