Zusammenfassung: | PURPOSE: A producing method of non-allergic plant protein hydrolysate is provided to enzyme-decompose rice protein, corn protein, and sesame oil meal to obtain the hydrolysate. CONSTITUTION: A producing method of non-allergic plant protein hydrolysate comprises the following steps: mixing plant protein and purified water in a weight ratio of 1:4-12; heating the mixture at 35-70 deg C, and inserting glutaminase and two kinds of proteinase at once; enzyme-decomposing the mixture, and heating the mixture for deactivating the enzymes; cooling the obtained protein hydrolysate at 0-30 deg C, and precipitating for 24-72 hours; and filtering the enzyme hydrolysate after separating a precipitate layer. |
