Zusammenfassung: | PURPOSE: A producing method of a fermented product using guava leaf powder is provided to crushing guava leaves using an ultra fine grinding method before fermenting. CONSTITUTION: A producing method of a fermented product using guava leaf powder comprises the following steps: washing and dehydrating guava leaves; drying the dehydrated guava leaves in a far infrared ray drier; micro-pulverizing the dried guava leaves into the size of 300nm-30 micrometers; mixing 0.1-0.5wt% of naturally fermented soy sauce, 1-44wt% of guava leaf powder, 1-6wt% of plasticized shell, 0.1-3wt% of ginger, 0.1-3wt% of cinnamon, 20-55wt% of purified water, and 20-50wt% of sugar or taffy; fermenting the obtained first mixture in a fermentation tank including a stirrer; adding the guava leaf powder, purified water, and the sugar or the taffy into the first mixture; heating the mixture at 95 deg C for 10 minutes-3 hours, cooling at 10-40 deg C, and stirring and fermenting the mixture for 10-60 days; and heating the obtained second fermented mixture at 95 deg C for 10 minutes-3 hours, cooling at 10-40 deg C, and stirring and fermenting the fermented mixture for 10-60 days. |
