Zusammenfassung: | PURPOSE: An extracting method of yacon strawberry and food using yacon strawberry extract are provided to manufacture the food containing the yacon strawberry extract on which a large quantity of oligosaccharide is contained increased by processing the yacon strawberry in low temperature. CONSTITUTION: An extracting method of yacon strawberry comprises the following steps: washing the yacon strawberry; adding α - amylase enzyme in the pulverized yacon strawberry; amd filtering the yacon strawberry after low-temperature enzyme treatment for 3 hours in a temperature of 40 ~ 60°C. The yacon strawberry extract is contained in yacon concentrate, yacon drink, and yacon jam etc. |
