Zusammenfassung:PURPOSE: A method for producing fruits vinegar or grain vinegar through alcohol fermentation, surface fermentation and core fermentation is provided to prevent residue of fermentation smell. CONSTITUTION: A method for producing fruits vinegar or grain vinegar comprises: a step of inoculating yeast to aqueous medium containing fruits concentrate liquid or grain concentrate liquid for alcohol fermentation; a step of adjusting acidity and performing surface fermentation; and a step of performing core fermentation of fermented liquid. The acidity is performed by adding fruits vinegar or grain vinegar. The fruit concentrate liquid are grain concentrate liquid are apple and rice concentrate liquid, respectively.
