Zusammenfassung:PURPOSE: A method for producing barley wine using cereals, Chinese matrimony vine, and pine joint is provided to produce barley wine which does not contain sugar and color and prevent hangover. CONSTITUTION: A method for producing barley wine comprises: a first process of making hard-boiled rice using barley, wheat, and glutinous rice; a second process of mixing unripen malt, pulverized pine joint, and Chinese matrimony vine with hard-boiled rice; a third process of ripening the mixture of hard-boiled rice at 22°C-25°C for five to seven days; a fourth process of adding water and biomalt to the mixture of hard-boiled rice then fermenting at 22°C-26°C for six to seven days; and a fifth process of collecting clear liquor 30 days after fermenting, distilling, the maturing at cool place for 180 days.
