Zusammenfassung:	PURPOSE: A rice coating composition and functional rice comprising the same are provided to retard discoloration and decay after a polishing process and to extend the shelf life. CONSTITUTION: A method for preparing functional rice comprising a rice coating composition comprises the following steps of: sterilizing and washing polished rice with negative ion water; drying the sterilized rice until the moisture content becomes 10-15%; coating the dried rice with the rice coating composition; drying the coated rice until the moisture content becomes 3-5%; and irradiating the radiation to the dried rice. The rice coating composition is composed of 15-25wt% of silk peptide, 3-7wt% of starch, 5-15wt% of collagen and 55-75wt% of drinking water.
