Zusammenfassung: | Functional jujube paste and a method for preparing Yakbap(sweet rice dish) using the same are provided to show excellent texture, hardness, elasticity, chewiness and coloration. A method for preparing Yakbap(sweet rice dish) using functional jujube paste comprises the following steps of: washing jujubes well; mixing 1kg of washed jujubes and 2.5 liters of water in an autoclave and heating them at 100°C for 1 hour; adding 3.0 liters of water to the jujubes and filtering them with a 35mesh standard sieve; concentrating the filtrate until the sweetness degree becomes 360Bx; water-soaking glutinous rice; dehydrating the glutinous rice and primarily steaming the rice; spraying salt water, adding additional seasoning and sauce to the rice and secondarily steaming them; re-spraying salt water and tertiarily steaming them; and allowing them to settle by their own heat. |
