Zusammenfassung: | A method for preparing Noni fruit concentrates by a natural fermentation process is provided to shorten a fermentation time remarkably and to remove taste and flavor effectively. A method for preparing Noni fruit concentrates comprises the following steps of: washing Noni fruits and drying them; spreading an aging solution on the dried Noni fruits and putting the fruits in a jar up to 70% of it; fermenting the Noni fruits at 27±1°C for 4-5 days and additionally adding 5% of aging solution into the jar and fermenting them another 10-11 days; inputting the Noni fruits in a mold and separating them into a liquid portion and a solid portion; putting the liquid portion and bamboo charcoal in the jar in a ratio of 100 to 1 by weight and aging them at 27±1°C for 1-6 months with its lid uncovered; filtering the aged solution; and sterilizing the aged solution by boiling it at 100°C for 1-3 hours. |
