Zusammenfassung:A method for preparing a bitter taste-removed sesame peptide is provided to allow sesame to be decomposed by a breakdown enzyme without any pH changes, thereby preventing environmental contamination caused by neutralization. A method for preparing a bitter taste-removed sesame peptide comprises the following steps of: preparing degreased sesame by treating the sesame with nucleic acid and compressing the sesame; adding vegetability protease Collupulin MG or bromelain to a sesame protein to be decomposed at 50±10°C for 2-4 hours under a pH 8 atmosphere; and adding flavourzyme to the decomposed sesame protein to be decomposed at 50±10°C for 9-11 hours.
